  1. 5 medium tomatoes

  2. 1 small zucchini

  3. 1 small sweet yellow pepper

  4. 1/4 cup cider vinegar

  5. 2 tablespoons olive oil

  6. 2 tablespoons minced fresh parsley

  7. 2 teaspoons sugar

  8. 1/2 teaspoon salt, optional

  9. 1/2 teaspoon dried basil

  10. 1/4 teaspoon dried marjoram

  11. 1/8 teaspoon pepper

  1. Cut tomatoes, zucchini and yellow pepper into 1/2-in. pieces; place in a large bowl. In a jar with tight-fitting lid, combine remaining ingredients; hake well. Pour over vegetables and toss. Serve immediately. Yield: about 8 servings.
