  1. Chicken ingredients

  2. 1 - 3 lb - fryer cut up

  3. 1/2 cup dry cooking sherry

  4. 1/2 cup water

  5. 1/4 tsp curry powder

  6. 1/2 cup diced celery

  7. 1 small onion chopped

  8. 1 tsp salt Casserole ingredients

  9. 1 (6 oz) pkg wild rice with seasonings

  10. 1 (6 oz) can button mushroom s

  11. 1 can cream of mushroom soup undiluted

  12. 1/2 cup sour cream

  1. Place chicken and chicken ingredients in a deep kettle. Bring to a boil. Reduce heat and simmer, covered, for 1 hour or till tender. Remove chicken and let cool. Remove skin and bones; cut into small pieces. Strain and save broth. Add enough water to broth to make the liquid called for on the rich package.

  2. Cook rice as directed using broth/water mixture. When rice is done, blend in soup, mushrooms (saving 8-10 for garnish). Fold in chicken and sour cream. Place in baking dish. Bake in preheated 350 degree oven for 1 hour.

  3. Instead of boiling chicken you can use a pressure cooker to reduce cooking time as your pressure cooker directs.
