  1. 300ml red wine

  2. 100ml port

  3. 100g golden caster sugar

  4. 1 star anise

  5. 2 cloves

  6. 500g fresh or frozen cranberries

  1. Put everything except the cranberries in a pan, bring to a simmer then cook until reduced by two thirds and syrupy.

  2. Add the cranberries and cook until jammy in consistency, about 10-15 minutes. Serve warm or cold.
