  1. 1 14 oz. can artichoke hearts, drained

  2. 1/2 c. onion

  3. 1 c. mayonnaise (I prefer Hellman's Light)

  4. 1 c. grated fresh Parmesan or Romano cheese

  5. 1 t. lemon juice

  6. 1/2 t. freshly ground black pepper salt to taste

  7. 1 t. olive oil dried bread crumbs cracker s for serving

  1. Preheat oven to 400°. Pulse the artichokes and onion in a food processor until finely chopped. Add the mayonnaise, Parmesan or Romano, lemon juice, pepper, and salt to taste. Spread mixture into ramekins and smooth tops. Spread a thin coat of olive oil on top of each and sprinkle with bread crumbs. You can also dust each with a little Italian seasoning and garlic powder. Bake until top is browned, about 20 minutes. Cool slightly. Serve with crackers.
