  1. 2 Unsweetened chocolate squares

  2. 1 tablespoon 15ml Butter

  3. 1/3 cup 78ml Boiling water

  4. 1 cup 198g / 7oz Sugar

  5. 2 tablespoons 30ml Corn syrup

  6. 1 teaspoon 5ml Vanilla - -or-

  7. 2 tsp. Rum

  1. In double boiler, melt unsweetened chocolate with butter. Stir to combine, then add the boiling water. Stir well until combined, then add the sugar and corn syrup.

  2. Bring sauce to a gentle boil over direct heat. Do not allow to boil furiously. Do not stir. For ordinary sauce, boil 3 minutes, covered to wash down any crystals that form. Uncover, reduce heat, and cook 2 more minutes.

  3. For a sauce that will harden, boil uncovered 3 minutes more. Just before serving, add vanilla or rum.
