  1. 3 tablespoons 45ml Unsalted butter

  2. 1 1/4 lbs 567g / 20oz Mushrooms - sliced

  3. 3 Green onions - minced

  4. 1 Garlic clove - minced

  5. 3 Shallots - minced

  6. 1 3/4 teaspoons 8.8ml Oregano

  7. 1 3/4 teaspoons 8.8ml Basil

  8. 1 1/4 teaspoons 6 1/3ml Salt

  9. 3/4 teaspoon 3.8ml Marjoram

  10. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  11. 1/4 teaspoon 1 1/3ml Thyme

  12. 1/2 teaspoon 2 1/2ml Dry mustard

  13. 4 Eggs

  14. 3/4 cup 177ml Skim or whole milk or half-and-half

  15. 1 Unbaked

  16. 9" pie crust

  1. Position rack in lower 1/3 of oven and preheat to 375 degrees.

  2. Melt butter in large skillet over medium-high heat. Saute the mushrooms, onions, garlic, and shallots together. Stir in seasonings and cook 2 minutes until liquid is evaporated. Let cool 5 minutes.

  3. In a medium bowl combine eggs with milk or cream and beat well. Stir in mushroom mixture and pour into pie crust. Bake until filling is puffed, set and starting to brown -- about 35 to 45 minutes.

  4. This recipe yields 6 servings.
