  1. 2tbsp olive oil Large knob of butter

  2. 225g/8oz mushrooms, sliced

  3. 2 garlic cloves, peeled and crushed

  4. 175ml/6fl oz double cream Half a glass of red wine Handful of fresh parsley, coriander or basil, chopped Salt and freshly-ground black pepper

  1. Heat the butter and oil in a pan and sauté the mushrooms and garlic for a few mins until they're brown and soft Stir in the cream, red wine and seasoning and reduce down for 8-10 mins Add the fresh herbs and heat for a few more mins Scatter with more chopped parsley and serve with rice, egg noodles or mashed potato
