    1. 2 cups flour

    2. 1 1/2 tsp baking powder

    3. 1 1/2 tsp nutmeg

    4. 1/4 tsp salt

    5. 1/4 tsp baking soda

    6. 3 large egg s, separated

    7. 15 oz can sweet potato es, drained

    8. 1 cup brown sugar , packed

    9. 1/2 cup butter , softened

    10. 1/2 cup buttermilk

    11. 1/2 cup raisin s Cream Cheese Frosting

    12. 8oz pkg cream cheese, soft

    13. 1/2 cup butter

    14. 3 1/2 cups powdered sugar

    15. 1 tsp vanilla

    16. 1 Tbs orange peel Mix together until creamy.

    1. Heat oven to 350°. Grease & flour 2 cake pans. In medium size bowl combine first 5 ingredients. In large bowl beat egg yolks & sweet potatoes until smooth; add brown sugar & butter. Beat until fluffy. On low speed add flour & buttermilk just until smooth. Beat egg whites until soft peaks form and fold into cake batter. Add raisins. Bake 30 to 35 minutes. Cool and frost with Cream Cheese Frosting.
