  2. 1 cup 62g / 2 1/5oz Whole wheat flour

  3. 1/2 cup 73g / 2.6oz Dried apricots - diced

  4. 1/4 cup 59ml Wheat germ

  5. 1/2 cup 118ml Honey

  6. 1/4 cup 59ml Vegetable oil

  7. 1/4 cup 59ml Pecans

  8. 2 teaspoons 10ml Baking powder

  9. 1 teaspoon 5ml Ground cinnamon

  10. 1/2 teaspoon 2 1/2ml Baking soda

  11. 1/2 teaspoon 2 1/2ml Salt

  12. 1/3 cup 78ml Skim milk

  13. 3/4 teaspoon 3.8ml Vanilla extract

  14. 1/4 cup 49g / 1.7oz Egg Beaters 99% egg substitute

  1. Recipe Instructions Preheat oven to 350 degrees. Spray 8 1/2- by 4 1/2-inch loaf pan with vegetable oil spray. In large bowl, mix oats, flour, apricots, wheat germ, pecans, baking powder, cinnamon, baking soda, and salt. In small bowl, mix milk, honey, vegetable oil, vanilla extract, and Egg Beaters. Stir the two mixtures together in the large bowl. Pour batter into pan. Bake 45 minutes. Cool pan. Remove from pan and cool completely on rack. Cut into 12 slices 3/4-inch thick.
