  2. 1 cup plum jam

  3. 2 tablespoons cornstarch

  4. 1/4 cup water

  5. 1/4 teaspoon ground ginger

  6. 1 clove garlic -- minced

  7. 1 cup water

  8. 1/2 teaspoon salt -- to taste

  9. 1 tablespoon soy sauce

  10. 1 tablespoon cider vinegar

  11. 2 cans tuna -- drained and chunked

  12. cooked rice

  13. chopped nuts -- optional

  14. chopped parsley -- optional

  15. coconut -- flaked, optional

  1. Put the jam in heavy pan. Mix cornstarch and 1/4 cup water and blend into the jam. Add ginger, garlic, water, salt, soy sauce, and vinegar and cook, stirring constantly, until thickened. Add tuna and heat. Serve over mounds of hot cooked rice and serve little side bowls of chopped nuts, parsley, and coconut to sprinkle over the top, if desired.
