  5. --CRUST--

  6. 1/2 c Butter or margarine

  7. 1/2 c C and H Powdered Sugar

  8. 2 Egg yolks

  9. 1 c All-purpose flour

  10. 1/2 ts Salt

  11. 2 ts Grated lemon rind

  12. --TOPPING--

  13. 2 Egg whites

  14. 1 tb Lemon juice

  15. 1 c C and H Powdered Sugar

  16. -- unsifted

  17. Beat together butter and sugar until creamy. Beat in egg yolks, then

  18. flour, salt, lemon rind and lemon juice. Spread stiff batter in ungreased

  19. 9-inch square pan. Bake in

  20. 350 degree oven

  21. 10 minutes. Beat egg whites

  22. until foamy. Beat in lemon juice. Gradually add sugar, beating

  23. constantly until very stiff. Spread topping evenly over crust. Return to

  24. 25 minutes. Cool slightly. Cut into 16 squares.
