  1. 3 cups low-sodium chicken broth (*or use beef broth or vegetable broth) 3/4 pound orzo pasta, uncooked 2 minced garlic cloves 1/2 teaspoon butter 1 cup grated Asiago cheese (*or freshly grated Parmesan cheese) salt to taste (*Note: The cheese is salty, so be careful how much you add) freshly ground pepper to taste Optional: chopped fresh

  1. In a large saucepan, heat broth to boiling over high heat. ** Add orzo, minced garlic and butter to boiling broth and reduce heat to high. Stir orzo, so that it will not stick to bottom of pan. ** Cook at a brisk simmer for about 7-8 minutes, stirring ocassionally, until most of the broth has been absorbed. ** Turn off the heat, leaving pan on the burner. Add the grated cheese, salt and pepper and stir to mix well. ** Serve. Optional: Sprinkle with chopped fresh parsley before serving.
