  1. Ripe Tomato Jam

  2. 4 lb medium ripe tomatoes

  3. 4 cups sugar

  4. 1 tsp whole cloves

  5. 1/2 Tbs. broken stick cinnamon

  6. 2 cups vinegar

  7. 1/2 tsp whole allspice

  8. Scald, peel, and quarter tomatoes. Place in preserving kettle.

  9. Add sugar, vinegar, cloves, allspice, and cinnamon. The spices

  10. may be tied in a loose muslin bag. Simmer, stirring frequently,

  11. until thick.
