  1. Crust:

  2. 4 cups Vanilla wafer cookies

  3. cup Pecans -- finely chopped

  4. cup Butter or margarine --

  5. Melted 1 tablespoon Sugar

  6. Filling:

  7. 16 ounces Cream cheese -- softened

  8. cup Sugar

  9. 1 large Egg

  10. 1 Lemon

  1. Preheat oven to 350. Using Food Chopper, finely chop wafers and pecans.

  2. Reserve ½ cup. In Batter Bowl combine chopped wafers, nuts and melted butter. Press onto bottom of 9"x13" Baker. In Batter Bowl combine cream cheese, sugar and egg. Using Lem on Zester/Scorer, zest 1 tbsp lemon peel.

  3. Using Lemon Aid, squeeze 3 tbsp of lemon juice; add peel and juice to cream cheese. Cream mixture until smooth using Bamboo Spoon. Using Super Scraper, spread over crust. Sprinkle with reserved ½ cup choppe d wafers.

  4. Bake 20-25 minutes or until set. Cool.
