  1. 2 cups cooked wild rice, cooled

  2. 1/4 cup chopped pecans

  3. 3 Tbsp. diced onion

  4. 2 eggs, beaten

  5. 2 Tbsp. flour

  6. 1/4 tsp. salt

  7. pepper

  8. 3 or 4 dashes Tabasco

  1. I n a large bowl, combine rice, pecans, onion, eggs, flour, salt, pepper, and Tabasco. Mix well.

  2. Drop batter by large spoonfuls, forming 3-inch pancakes. Fry until deep golden, about 2 miniutes each side.

  3. Makes 6 large pancakes.
