  1. 3 cans chicken broth

  2. 1/4 cup regular long-grain rice

  4. 3 T lemon juice

  5. 1/4 cup black rice , precooked

  6. rotisserie chicken meat

  1. Precook the black rice so it doesn’t stain the broth a dark color.

  2. In a large saucepan over high heat, heat broth and white rice to boiling. Reduce heat to low; cover and simmer 15 minutes or until rice is tender.

  3. In small bowl ,with wire whisk or hand beater, beat eggs and lemon juice together until frothy.

  4. Into egg mixture, stir amount of hot broth; pour egg mixture into broth, stirring. Add black rice and chicken pieces and cook over low heat, stirring, until soup is hot (do not boil).
