  1. 1 stalk lemongrass , thick outer leaves removed, finely chopped

  2. 1 tbsp sweet chilli sauce

  3. 2 limes

  4. vegetable oil

  5. 250g beef fillet or sirloin steak, trimmed of fat and thinly sliced

  6. 100g rice vermicelli noodles

  7. 2 tsp golden caster sugar

  8. 1 tbsp fish sauce

  9. 1/2 small red onion , thinly sliced

  10. 2 small carrots , peeled and cut into ribbons with peeler

  11. handful mint , roughly chopped

  1. Mix the lemongrass, chilli sauce, the juice of 1/2 a lime, 1 tsp of oil and some seasoning in a bowl. Tip in the beef strips and stir.

  2. Cook the rice noodles following the packet instructions, rinse with cold water and drain thoroughly. Mix the sugar and fish sauce with the juice of 1 lime. Add the onion, carrots and noodles and leave to rest while you cook the beef.

  3. Thread the beef strips onto skewers and griddle or grill for 3-5 minutes or until cooked to your liking, turning frequently. Mix the mint into the noodle salad and serve alongside the beef skewers with a wedge of lime.
