  5. 2 ts Cumin seeds

  6. 4 Cloves

  7. 3/4 ts Cardamom seeds

  8. 1/2 ts Black peppercorns

  9. 1/4 ts Whole allspice

  10. 1 ts Fenugreek seeds

  11. 1/2 ts Coriander seeds

  12. 8 Small dried red chiles

  13. 1/2 ts Grated fresh gingerroot

  14. 1 teaspoon dried 1/4 ts Tumeric

  15. 1 ts Salt

  16. 2 1/2 tb Sweet Hungarian paprika

  17. 1/8 ts Cinnamon

  18. 1/8 ts Ground cloves

  19. In a small frying pan, on medium low heat, toast the cumin, cloves,

  20. cardamom, peppercorns, allspice, fenugreek, and coriander for about 2

  21. minutes, stirring constantly. Remove from the pan and cool for 5

  22. minutes.

  23. Discard the stems from the chiles. In a spice grinder or with a

  24. mortar and pestle, finely grind together the toasted spices and the

  25. chiles. Mix in the remaining ingredients.

  26. Store Berbere refrigerated in a well sealed jar or a tightly closed

  27. plastic bag. MMMMM
