  1. 1 Chickpeas - (15 oz) - drained, rinsed

  2. 1 Roman beans - (15 oz) - drained, rinsed

  3. 1 Artichoke hearts - (14 oz) - cut into quarters

  4. 1 cup 110g / 3.9oz Diced celery

  5. 3/4 cup 46g / 1.6oz Diced red onion

  6. 1/2 cup 73g / 2.6oz Roughly-chopped pitted black olives

  7. 1/3 cup 78ml Red wine vinegar

  8. 1/4 cup 59ml Olive oil

  9. 1/4 cup 36g / 1 1/3oz Freshly-chopped Italian parsley

  10. 1 tablespoon 15ml Minced garlic

  11. 1/2 teaspoon 2 1/2ml Dry mustard

  12. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  1. Recipe Instructions In a large bowl, combine all of the ingredients, and toss well to combine. Cover and chill for 30 minutes to several hours to allow the flavors to blend. Toss the salad again before serving. This recipe yields 6 cups.
