  1. 8 cups 500g / 17oz Chopped onions

  2. 2 tablespoons 30ml Minced garlic

  3. 6 tablespoons 90ml Olive oil

  4. 9 Tomatoes

  5. 6 tablespoons 90ml Fresh marjoram - chopped

  6. 4 teaspoons 20ml Fresh rosemary - chopped

  7. 1 tablespoon 15ml Salt

  8. 1 tablespoon 15ml Sugar

  9. 2 tablespoons 30ml Black pepper

  10. 3 lbs 1362g / 48oz Fettucine - cooked

  11. 1 1/2 cups 219g / 7.7oz Ricotta cheese

  1. SautE9 onions and garlic in oil in a large skillet over medium high heat until softened.

  2. Stir in remaining ingredients except ricotta and fettucine. Cook over medium high heat stirring frequently for 10-15 minutes, or until sauce thickens.

  3. Top each serving with 1 oz. (1 Tbsp.) ricotta cheese.
