  1. 4 pieces of chicken maryland (or 1 free range chicken, cut in 4 pieces) Salt and freshly ground pepper

  2. 1 tsp chilli flakes

  3. 100mL extra virgin olive oil Juice of

  4. 1 lemon Extra virgin olive oil to finish

  5. 1 tbsp chopped parsley

  1. Preheat oven to 200C. Season chicken pieces with salt, pepper and chilli and drizzle with extra virgin olive oil. Roast for 1 hour or until golden brown. ** Serve with mash potato or with Tangy Cous Cous salad
