  2. HOT POT LEMON CHICKEN

  7. 1 tb Wine

  8. 1 tb Brown sugar

  9. 1 t Oyster sauce

  10. ds Sesame oil

  11. 1/4 c Soup stock

  12. 1 1/2 ts Salt

  13. 1 1/2 ts Cornstarch

  14. --MAIN INGREDIENTS--

  15. 2 tb Oil

  16. 2 sl Ginger, more if desired

  17. 1 Chicken, with bones

  18. -cut in bit sized pieced

  19. -(boned works well, too)

  20. 1 lg Lemon, sliced and seeded

  21. 2 Green onion stalks, cut -into 1 1/2 in peices

  22. Combine sauce ingredients and set aside.

  23. Heat wok or frying pan with oil and ginger over high

  24. heat. Add chicken, stirring continuously for 1 1/2 to

  25. 2 minutes. Add lemon, green onion and sauce mixture.

  26. 1 1/2 to 2 minutes.

  27. Trnasfer mixture to a clay pot, or a saucepan. Cover

  28. 15 to 18 minutes.

  29. (Optional) Use a cornstartch solution to thicken the

  30. liquid. Serve with rice. - - - - - - - - - - - - - - - - - -
