  1. 2 lb.s tomato es, peeled, seeded, and chopped

  2. 4 lb.s potato es, peeled and sliced

  3. 3 c vegetable oil

  4. 2 T butter

  5. 1 onion , diced

  6. 5 garlic cloves, minced

  7. 2 lb.s ground beef

  8. 1 t salt

  9. 1/2 t pepper

  10. 1/2 c dry breadcrumb s Topping:

  11. 2 T melted butter

  12. 6 egg s

  13. 1 c milk

  14. 3/4 c grated Parmesan cheese

  15. 1/2 c dry breadcrumb s

  1. Heat the oil in a pan with high sides until hot but not smoking. Fry potatoes in oil until golden brown and tender. Drain on paper towels and set aside. (Let oil cool, then discard it.) 2. Preheat oven to 375°F.

  2. Sauté onion and garlic in butter. Add beef and brown. Add tomatoes, salt, and pepper and cook until liquid has mostly evaporated. Remove from heat and stir in Parmesan cheese and breadcrumbs.

  3. In a 9x13", greased casserole, layer potatoes, then meat, then potatoes, then meat.

  4. Whisk topping together and pour over the top. Bake for 40 minutes, or until golden brown and bubbling.
