  7. 1 teaspoon 5ml Baking soda

  8. 1 teaspoon 5ml Salt

  9. 1 cup 237ml Milk

  10. 1/2 cup 99g / 3 1/2oz Shortening

  11. 2 cups 396g / 13oz Eggs (large)

  13. Orange juice

  14. 1/3 cup 65g / 2 1/3oz Sugar

  15. 1 teaspoon 5ml Cinnamon

  16. 1/4 cup 36g / 1 1/3oz Walnuts - finely chopped

  1. This recipe was the 1950 $25,000 winner in the Pillsbury bakeoff. It recommends Pillsbury's Best all-purpose flour or unbleached flour. Do not use self rising flour.

  2. Preheat oven to 350F. (325F if using a glass pan) Grease (not oil) and flour a 13 x 9 baking pan.

  3. Lightly spoon flour into measuring cup; level off. Squeeze orange; reserve 1/3 cup juice.

  4. Grind orange peel and pulp, raisins and 1/3 cup walnuts together; set aside.

  5. In large bowl, blend flour, sugar, soda, salt, milk, shortening and eggs. Beat for 3 minutes at medium speed. Stir in orange-raisin mixture. Pour into prepared pan.

  6. Bake for 35-40 minutes or until toothpick inserted in center comes out clean.

  7. Topping: Drizzle reserved orange juice over warm cake.

  8. Combine sugar, cinnamon and walnuts; sprinkle over cake. Garnish with orange slices if desired.

  9. High altitudes: Above 3500 feet, add 2 Tablespoons flour; bake at 375F for 35-40 minutes.
