  1. 1 cn Salmon,flaked(15 1/2oz)

  2. 2 c Rice,hot cooked

  3. 2 tb Parsley,minced

  4. 1 tb Onion,minced

  5. 1/2 c Celery,minced

  6. 2 tb Lemon juice

  7. 1 ts Salt

  8. 1/8 ts White pepper

  9. 3 Eggs,beaten

  10. 5 Olives,pimiento-stuffed(opt)

  11. --OLIVE SAUCE--

  12. 2 tb Butter

  13. 2 tb Flour

  14. 1 c Milk

  15. 1/4 ts Salt

  16. 1/4 ts Mustard

  17. 1/2 c Olives,pimiento-stuffed,slic

  18. 1. Combine salmon with rice in a large mixing bowl.

  19. 2. Add parsley, onion, celery, lemon juice, salt and pepper; blend in

  20. 3. Pour into buttered, deep 10-inch pie pan; bake in preheated

  21. 350'F.

  22. 45 minutes.

  23. 4. Garnish with olive slices; serve in wedges with Olive Sauce.

  24. ** OLIVE SAUCE

  25. ** 1. Melt butter in a heavy saucepan over low heat.

  26. 2. Add milk slowly, stirring constantly, cooking until thickened.

  27. 3. Remove from heat; add salt, mustard and olive slices.
