  1. 3 cups carrots, shredded

  2. 1 quart boiling water

  3. 1/2 serrano chile, seeded and minced

  4. 2 Tablespoons lime juice

  5. 1/2 Tablespoon maple syrup

  6. 2 Tablespoons cashew pieces, toasted

  7. 1 Tablespoon cilantro, chopped

  1. Preparation: Place carrots in a colander. Pour boiling water over them, drain well. Combine chile , lime juice and maple syrup in a bowl and whisk with a fork. Add carrots, cashews , and cilantro . Toss to mix. Serve at room temperature or chilled.
