  1. 4 cloves garlic finely chopped

  2. 1 tablespoon chopped fresh rosemary

  3. 1 teaspoon grated lemon rind

  4. 1/2 teaspoon salt

  5. 1/4 teaspoon freshly ground black pepper

  6. 1/4 teaspoon dried thyme

  7. 2 tablespoons fresh lemon juice

  8. 2 tablespoons olive oil

  9. 3 pounds boneless pork top loin

  10. Gravy:

  11. 2 tablespoons all purpose flour

  12. 1 cup chicken broth

  13. 1 cup water

  1. Preheat oven to 450.

  2. Mix together garlic, rosemary, lemon rind, salt, pepper, thyme, lemon juice and half the oil.

  3. Using your hands rub seasoning mixture over top and sides of pork.

  4. Spoon remaining olive oil into flame proof roasting pan the spread evenly over bottom of pan.

  5. Place pork in pan and roast at 450 for 30 minutes.

  6. Lower temperature to 350 and roast 30 minutes longer.

  7. Remove pork from pan to cutting board and allow to rest 15 minutes.

  8. Pour off all but 2 tablespoons fat from roasting pan then sprinkle flour evenly over droppings.

  9. Place pan over medium high heat and cook 1 minute scraping up browned bits from bottom.

  10. Stir in broth mixture then cook stirring 5 minutes or until thickened.

  11. Strain into a bowl and serve with sliced pork.
