  2. 1/2 pound shrimp -- shelled and cleaned

  3. 4 cups water

  4. 1/2 cup straw mushrooms -- canned

  5. 5 kaffir lime leaves

  6. 6 tablespoons lime juice

  7. 6 tablespoons fish sauce, squid brand 1 stalk lemon grass -- cut in

  8. 1"lengths

  9. -- lower 1/3 portion

  10. 1 golonga root -- sliced

  11. 4 stalks green onions -- chopped

  12. 1/4 cup fresh cilantro -- chopped

  13. thai chili peppers -- optional

  14. 1/4 teaspoon chili in oil

  1. Shell shrimp or prawns(preferred) and reserve shells. Rinse prawns and shells. Place shells in a pot with the 4 cups water. Bring to a boil. Strain stock and discard shells.

  2. Add lime leaves, golonga, and lemon grass to stock and simmer for awhile. Add fish sauce, cook a few minutes more.

  3. Add shrimp and do not stir. Add chili oil, Add mushrooms.

  4. Put lime juice in bowl add soup and garnish with cilantro, chili peppers, and onions.
