  1. 1/2 lb 227g / 8oz Brown lentils

  2. 1/2 cup 31g / 1.1oz Finely-diced onion

  3. 2 tablespoons 30ml Olive oil

  4. 2 teaspoons 10ml Chopped fresh mint

  5. 2 teaspoons 10ml Chopped fresh basil

  6. 1 teaspoon 5ml Ground cumin

  7. 1 teaspoon 5ml Minced garlic

  8. Salt - to taste

  9. Freshly-ground white pepper - to taste

  1. Place the lentils in a pot with cold water to cover and cook until tender but not mushy. Drain lentils, and while still hot, toss thoroughly with onion, olive oil, herbs, spices and garlic. Season to taste with salt and white pepper.
