  1. INGREDIENTS:

  2. 2 large potatoes, scrubbed clean

  3. 1/2 tsp. ginger grated or paste

  4. 1/2 tsp. garlic grated or paste

  5. 4-5 green chillies finely chopped

  6. 1 onion grated

  7. 1 stalk curry leaves

  8. 1 tsp. coriander leaves finely chopped

  9. 1/2 tsp. each cumin and mustard seeds

  10. 4-5 pinches asafoetida

  11. 1/4 tsp. turmeric powder

  12. 1 tsp. lemon juice

  13. salt to taste

  14. 1 tbsp. oil

  15. DIRECTIONS:

  16. Chopped potatoes (with skins) into pieces.

  17. Boil in salted water, covered, till they are tender.

  18. Drain and keep aside.

  19. Heat oil in pan, add seeds allow to splutter.

  20. Add asafoetida, ginger, garlic, curry leaves and chillies.

  21. Stir for a moment, add grated onions.

  22. Stirfry till paste is light pink in colour.

  23. Add potatoes, salt, turmeric, lemon juice, and stir.

  24. Simmer for 2 minutes. Garnish with coriander leaves.

  25. Serve hot with puris, parathas, or bread.
