  1. 1 medium onion, chopped

  2. 4 cloves garlic, minced

  3. 1/2 lb mushrooms, sliced

  4. 1 red bell pepper, chopped

  5. 2 stalks celery, sliced

  6. 2 (14 1/2 ounce) cans low-sodium tomatoes, with juice

  7. 2 (15 ounce) cans cannellini beans, rinsed and drained

  8. 2/3 cup fresh basil

  9. 1/2 lb spinach, cleaned,stems removed and leaves chopped

  10. salt and pepper

  11. 1 lb ziti pasta, cooked al dente

  12. grated parmesan cheese

  1. Saute onion, garlic, mushrooms, bell pepper& celery for 5 minutes or until soft.

  2. Reduce heat and add tomatoes (w/juice)& beans.

  3. Cover& simmer for 15 minutes.

  4. Add spinach, basil, salt& pepper and simmer 15 more minutes.

  5. Toss with additional chopped basil to taste and serve over pasta (optional).
