  8. 1 cup rice

  9. 1 pound lean ground beef

  10. 1/2 onion -- chopped

  11. 3 tablespoons vegetable oil -- or bacon fat

  12. 1 garlic clove -- minced

  13. 1/2 green bell pepper -- chopped

  14. 2 1/2 cups stewed tomatoes

  15. 1 teaspoon salt

  16. 2 teaspoons chili powder

  17. 1. Wash rice, drain, and allow to dry thoroughly.

  18. 2. Heat oil in heavy skillet; add rice. Cook, stirring constantly,

  19. until lightly browned, about 10 minutes.

  20. 3. Add onions, garlic, green peppers and beef. Stir often to break up

  21. and brown meat; cook until onion is limp and lightly browned.

  22. 4. Add undrained, chopped tomatoes and seasonings. Cover and simmer

  23. about 25 minutes or until rice is tender and most of the liquid has been

  24. absorbed. Let stand, covered, for about 5 minutes before serving.
