  1. 1 unbaked 9-inch pastry crust

  2. 3/4 lb tofu

  3. 1 can pumpkin, (16 oz)

  4. 1 1/2 tsp cinnamon

  5. 3/4 tsp ginger

  6. 1/2 tsp nutmeg

  7. 1 tsp salt

  8. 1 tsp vanilla

  9. 1 1/2 tsp rice syrup

  10. 1 1/3 cup sugar

  11. 1/3 cup oil

  12. Preheat oven to 350F. Blend all the ingredients in a blender until

  13. smooth and creamy. Pour this mixture into an unbaked pastry shell.

  14. Bake for one hour.

  15. Chill in the fridge before serving.
