  1. 4 1/2oz Coarsely chopped white

  2. chocolate

  3. 1/4lb Unsalted butter, at room

  4. temperature

  5. 1/4c Firmly packed dark brown

  6. sugar

  7. 1 c Plus

  8. 2 tbsp flour, sifted

  1. Preheat oven to 400 deg F.

  2. Lightly butter a 9-inch pie pan (or your favorite shortbread mold).

  3. Using a food processor fitted with a metal blade, chop the white chocolate using on-off pulses, until it resembles coarse meal.

  4. Using an electric mixer set at medium speed, cream the butter with the sugar in a large bowl until smooth.

  5. Beat in the flour.

  6. Stir in the chopped white chocolate.

  7. Pat the dough evenly into the prepared pan.

  8. Using the tip of a sharp knife, score the dough into eight equal triangles.

  9. Bake the shortbread until light golden in color, about 30 minutes.

  10. Transfer in the pan to a wire rack to cool slightly.

  11. Remove the shortbread from the pan and cool completely on the wire rack.

  12. Store in an airtight container at room temperature.
