  2. BLACK BEAN SOUP WITH JALAPENOS

  6. 8 Jalapeno chiles, stems and -seeds removed, chopped

  7. 1 tb Dried crushed red chile,

  8. -seeds included

  9. 2 c Black beans, sorted and -rinsed

  10. 2 tb Bacon fat or vegetable oil

  11. 2 md Onions, chopped

  12. 4 Cloves garlic, minced

  13. 1 lg Ham hock

  14. 1 c Canned tomatoes, chopped

  15. 2 ts Ground cumin

  16. 1 t Ground epazote

  17. 1 t Ground coriander

  18. 1/4 ts Ground cloves

  19. 1 tb Red wine vinegar

  20. 6 To 8 cups water

  21. 3 tb Tequila

  22. Serves 8 Sour cream for garnish

  23. Cover the beans with water and soak them overnight.

  24. Saute onion and garlic in bacon fat until soft.

  25. Combine all ingredients, except tequila and sour

  26. cream, in large pot and bring to a boil. Reduce heat

  27. 2 to 3 hours or until beans are soft.

  28. Remove ham hock and shred meat.

  29. Divide soup in half, puree half of it and add back to

  30. the remaining soup. Add shredded meat and simmer for 15 minutes or until thickened to desired consistency.

  31. Remove from heat, stir in tequila, garnish with sour

  32. cream, and serve.
