  1. Split chickens in half and season with salt and pepper. Pour over piri piri sauce and allow to marinate for a couple of hours or overnight.

  2. Preheat a large griddle pan until hot, add chicken skin side down and cook for 6-8 minutes on each side. Remove from heat and place into a preheated 200C oven for 10 minutes or until cooked through.

  3. Serve with blood orange salad .
