  6. 1 Sm eggplant -- in

  7. 1/4 slices

  8. Coarse salt

  9. Pepper

  10. 1 tb Chopped fresh basil

  11. 1 tb Chopped fresh parsley

  12. 1 Clove garlic -- minced

  13. Red wine vinegar

  14. 1 t Mashed sun-dried tomato

  15. 1 c Fresh Montrachet

  16. Chopped parsley

  17. Prepare medium charcoal grill. Place eggplant slices on large tray or baking sheet and sprinkle with coarse salt. Let stand to release moisture,

  18. about 20 minutes. Drain, rinse and pat dry. Sprinkle eggplant slices on

  19. both sides with pepper, basil, parsley and garlic. Grill over medium coals

  20. until wilted but not overcooked, sprinkling with vinegar while cooking.

  21. Remove from grill. Blend sun-dried tomato into goat cheese. Spread some on

  22. each eggplant slice. Roll, jelly-roll fashion. Arrange eggplant on serving
