  1. 1/2 Cucumber peeled - seeded and Diced 2 Plum tomatoes - seeded and Diced 1 Pimientos - diced (4 oz)

  2. 1/4 cup 36g / 1 1/3oz Chopped scallions

  3. 1/4 cup 59ml Snipped fresh parsley

  4. 1/4 cup 59ml Cider vinegar

  5. 2 tablespoons 30ml Honey

  1. In a small bowl, combine the cucumbers, tomatoes, pimientos, scallions and parsley. In a microwavable cup, mix the vinegar and honey. Microwave on HIGH for 20 seconds. Pour over vegetables.
