  1. 1 1/2 cups 93g / 3 1/3oz Thinly-sliced onions

  2. 1/2 cup 73g / 2.6oz Diced green pepper

  3. 1 tablespoon 15ml Olive oil

  4. 1/4 lb 113g / 4oz Mushrooms - coarsely chopped

  5. 2 teaspoons 10ml Chopped garlic

  6. 1 1/2 teaspoons 7 1/2ml Sugar

  7. 3/4 teaspoon 3.8ml Italian seasoning

  8. 3/4 teaspoon 3.8ml Salt

  9. 1 1/2 cups 93g / 3 1/3oz Chopped ripe tomatoes

  10. 6 Italian turkey sausage links

  11. 6 Buns - (6" ea)

  1. In a large nonstick skillet over medium-high heat, saute onions and green pepper in oil 2 to 3 minutes or until tender. Add mushrooms and garlic and cook 2 to 3 minutes, stirring constantly. Reduce heat to medium and stir in sugar, Italian seasoning and salt. Add tomatoes and cook 10 to 15 minutes or until liquid has evaporated.

  2. Prepare a charcoal grill for direct heat cooking. Grill sausages 4 to 5 minutes per side or until 160 degrees is reached on a meat thermometer (meat should no longer be pink in the center).

  3. To serve, place sausages in buns and top with sauteed vegetables.

  4. This recipe yields 6 servings.
