  2. Title: COLD MELON SOUP

  5. 3 c Corsely chopped cantaloupe

  6. 3 c Corsely chopped honeydew

  7. 2 c Fresh orange juice

  8. 3 T Honey

  9. 2 c Dry champagne

  10. 1 c Whipping cream

  11. Fresh mint leaves (garnish)

  12. Note: Melons should be RIPE.

  13. Finely chop 1 1/2 cups each of cantaloupe and honeydew melons. Set aside.

  14. Place remaining coarsely chopped melons in blender with orange juice, lime

  15. juice and honey (this will only take a few seconds). Pour into large

  16. bowl. Stir in champagne and reserved melon. Cover and refrigerate until

  17. ready to serve.

  18. Pour into iced bowls. Whip cream and use as garnish with fresh mint

  19. 6 to 8 servings --
