  1. 1/2 Pound Shrimp

  2. 1/4 Cup Light Mayo

  3. 1/4 Cup Chicken Broth- Undiluted

  4. 1 Teaspoon Grated Lemon Rind

  5. 1 Tablespoon Fresh Lemon Juice Vegetable Cooking Spray

  6. 2 Teaspoons Vegetable Oil

  7. 1 Tablespoon Peeled, Grated Ginger Root

  8. 1 Clove Garlic, Minced

  9. 1 Cup Diagonally Sliced Fresh Asparagus

  10. 2 Cups Cooked Penne

  11. 1/4 Teaspoon Lemon -Pepper Seasoning

  1. Combine mayo and next three ingredients in a bowl; stir well with a wire whisk, and set aside. Coat a wok or non-stick skillet with cooking spray; add oil, and heat at medium-high until hot. Add ginger and garlic; stir-fry 1 minute. Add shrimp and asparagus; stir-fry 3 minutes. Add mayo mixture and pasta; cook until heated. Sprinkle with lemon-pepper seasoning.
