  2. 1 Cup sugar

  3. 1/2 Cup margarine-softened

  4. 2 eggs

  5. 1 Teaspoon grated lemon peel

  6. 2 extra-ripe bananas-medium

  7. 2 Cups all-purpose flour

  8. 2 Teaspoons baking powder

  9. 1/2 Teaspoon salt

  10. 1/4 Teaspoon ground cinnamon

  11. 1/4 Cup poppy seeds

  1. Preheat oven to 350 degreesIn large bowl, beat sugar and margarine until light and fluffy. Beat ineggs and lemon peel.

  2. Process bananas in blender; measure out 1 cup.

  3. In small bowl, combine flour, baking powder, salt and cinnamon. Addflour mixture to egg mixture alternately with processed bananas, endingwith flour mixture. Stir in poppy seeds. Spoon into greased 9x5-inchloaf pan.

  4. Bake in preheated oven 60 to 70 minutes until wooded pick inserted incenter comes out clean. Cool slightly in pan. Invert onto wire rack tocool completely. Makes one loaf.
