  1. 4 lbs 1816g / 64oz Miniature mexican tomatoes - - washed & deseeded

  2. 12 Shallots - chopped

  3. 1/3 cup 78ml Water

  4. 1/3 cup 30g / 1.1oz Cucumber - minced

  5. 1 teaspoon 5ml Salt

  6. 1/4 teaspoon 1 1/3ml Black pepper

  7. 1/3 cup 20g / 0.7oz Corn flour

  1. Place tomatoes in a large saucepan, add the shallots & water & simmer for 30 minutes, stirring gently on occasion. Add the cucumbers & salt & pepper, simmer for 10 minutes, stirring, until the tomatoes break up. Quickly add the corn flour, 1 tablespoon at a time, stirring slowly.

  2. Simmer for 5 minutes & serve.
