  1. 4 pieces halibut fillet (6 oz each)

  2. 40 Ritz crackers, coarsely crushed

  3. 2 Tbsp butter, softened

  1. Heat oven to 350°F. Line a baking sheet with foil.

  2. Place fish on foil; sprinkle with 1⁄8 tsp each salt and pepper.

  3. Mix crushed crackers and butter in a small bowl. Gently pat on top of fish.

  4. Bake 10 minutes per inch of thickness or until just opaque in center. Sprinkle with chopped parsley, if desired.Good with roasted potato wedges and steamed broccoli.
