  1. Vegetable Curry

  2. 2 -3 large potatoes, cubed

  3. 1 large onion, diced

  4. 2-3 carrots, sliced

  5. 2 bell peppers, cut into bite size pieces

  6. 1 T fresh ginger, grated or minced

  7. 1 T curry paste, to taste

  8. garlic to taste

  9. 1/2 package frozen peas or fresh if possible

  10. 1 cup raisins

  11. 1 can coconut milk

  12. 1 can tomato sauce (very large if no coconut milk)

  13. brown rice

  14. Start rice, especially if brown rice.

  15. Cut up all vegetables first.

  16. If you can't simmer this for a long time, microwave the potatoes

  17. until almost soft.

  18. Turn heat to medium. Cover bottom of pan with olive oil. Add

  19. 1 Tablespoon

  20. taste) curry paste. Add ginger. Stir until well-integrated. Add

  21. tomato sauce or peeled fresh whole tomatoes.

  22. Add potatoes (unless still being microwaved), and carrots. Cook

  23. for 5 minutes, stirring occasionally. Add bell peppers, cook for 5 minutes. Add coconut milk and raisins. Cook

  24. 5 minutes, add

  25. peas. Cook until everything is soft.

  26. Serve over brown rice.
