  2. 1 red pepper , cored and sliced

  3. 1 yellow pepper , cored and sliced

  4. 1 onion , halved and sliced

  5. 3 plum tomatoes , diced Kosher salt

  6. Ground pepper

  7. 2 tablespoon(s) chopped fresh basil

  1. Place skillet over medium heat and add oil once pan is hot. Add peppers and onions and sauté for 10 minutes.

  2. Stir in tomatoes, cover, and cook on low for 10 minutes, until vegetables are very tender and saucy.

  3. Season with kosher salt and pepper to taste. Stir in basil.
