  1. 1 3 or 4 pound chicken

  2. 4 cloves garlic whole fresh coriander groundnut oil for mop -- optional

  1. Preparation : Wash and dry chicken. Quarter the garlic cloves - don't bother to peel unless you wish to eat them later. Place the garlic and a loose wad of the coriander into the chicken. Smoke at 240-250F for about 3 hours (longer if you can keep the temp. down). Every half-hour or so, chuck some coriander onto the charcoal
