  2. 3/4 cup butter flavored shortening or margarine

  3. 1 cup firmly packed brown sugar

  4. 1 egg

  5. 1 cup mashed ripe bananas,

  6. 2 to 3 medium

  7. 1 3/4 cups quick oats

  8. 1 1/2 cups all purpose flour

  9. 1 teaspoon salt

  10. 1 teaspoon cinnamon

  11. 1/2 teaspoon baking soda

  12. 1/4 teaspoon nutmeg

  13. 1/2 cup coarsely chopped walnuts or raisins

  14. Frosting, optional :

  15. 2 tablespoons butter flavored shortening or margarine

  16. 1/4 cup very ripe mashed banana

  17. 1 teaspoon lemon juice

  18. 2 cups icing sugar

  19. Finely chopped walnuts

  1. Heat oven to 350 degrees F.

  2. Grease baking sheet and set aside.

  3. Cream 3/4 cup butter flavor shortening and the brown sugar in large bowl using an electric mixer at medium speed until mixture is well blended.

  4. Beat in the egg.

  5. Add 1 cup very ripe mashed bananas.

  6. Mix until creamy.

  7. Combine the oats, flour, salt, cinnamon, baking soda and nutmeg then stir into creamed mixture.

  8. Mix in 1/2 cup nuts.

  9. Drop 2 level measuring tablespoonfuls of dough into a mound to form each cookie.

  10. Place 2 inches apart on baking sheet.

  11. Bake in a 350 degrees F oven for 15 to 17 minutes.

  12. Cool one minute on baking sheet.

  13. Remove to cooling rack and cool completely.

  14. For frosting, cream 2 tablespoons butter flavor shortening 1/4 cup very ripe mashed bananas and lemon juice.

  15. Add icing sugar.

  16. Beat until smooth.

  17. Frost cooled cookies.

  18. Sprinkle with finely chopped nuts, if desired.
