  1. 3 cups all-purpose flour

  2. 2 tbsp. sugar

  3. 1/4 tsp. salt

  4. 1-1/2 cups cold, unsweetened butter, cut into chunks

  5. 3 tbsp. ice water

  1. Place the flour, sugar and salt in the bowl of a food processor and process for 5 seconds. Remove the top and scatter the butter pieces over the flour. Process by pushing the pulse button on and off until the mixture resembles a coarse meal: This should take no more than 30 seconds. Remove the top and sprinkle the mixture with the water. Process for 5 to 10 seconds more, until the dough starts to come together. The trick is to press the pulse button for seconds and not to process the dough until it forms a ball. Remove the top, carefully take out the blade, and press the mixture together to pick up all the bits of dough. Divide the dough into two portions, flatten into disks, cover, and refrigerate for at least 30 minutes before rolling and baking. Makes double crust for one 10 inch pie.
