  1. 2 tablespoons 30ml Chicken broth

  2. 1 Garlic clove - minced

  3. 1/2 Red onion - diced

  4. 1 Red bell pepper - diced

  5. 2 tablespoons 30ml Jalapeno peppers - chopped

  6. 2 cups 125g / 4.4oz Corn - frozen

  7. 1/2 cup 118ml Chicken broth

  8. 10 oz 284g Spinach - trimmed and chopped

  9. 1/4 teaspoon 1 1/3ml Pepper

  10. 1/3 cup 48g / 1.7oz Basil - fresh, chopped

  1. Recipe Instructions Heat oil in large, deep skillet or Dutch oven. Add garlic and onion. Cook gently until tender and fragrant, but do not brown. Add red peppers, and jalapenos. Cook for 5 to 10 minutes. Stir in corn and mix together well. Add stock and bring to a boil. Cook gently for 5 minutes. Stir in spinach and cook for 5 minutes longer, just until wilted. Add pepper, salt, if desired and basil. Taste and adjust seasonings, if necessary.
